Banana & carrot muffins

So I've been baking these muffins for some time now & they never get old, my husband loves taking them to school with him, they are full of all the good nutrients our bodies need, it also makes you full & give you that nice clean morning start :)







So for the ingredients you will need : 11/4 cups rye flour, 1/2 cup brown sugar, 1/2 tsp baking soda, 1/2 tsp baking powder, 1/2 tsp ground nutmeg, a pinch of ground ginger, 1/2 tsp coarse salt, 1 cup raisins, 3 tbs EVOO, 2 eggs, 1/3 cup skimmed milk, 2 shredded carrots and one ripe banana.






Directions : 1 -  Whisk all the dry ingredients together ( flour, sugar, baking soda, baking powder,      nutmeg, salt and ground ginger ) 
2 - Stir in raisins and oats
3 - Add eggs, oil, milk, banana and shredded carrots.





For the topping I love to put a tsp of my favourite crunchy peanut butter, a slice of banana and a sprinkle of all spice.
